Tonight, after a week full of crazy adventures, my wife and I had a date. I cooked up something that we don't usually do around here: fish – tilapia specifically. Tonight we had Cilantro Parsley Lime Fish and Daddy's Fried Corn and Onions. He really didn't have much of a chance; his bike probably weighed twice as much as mine. Oh sure he pulled away right as the light turned green on Belvidere, but I didn't know we were racing at that point. We had stuffed green peppers and vermicelli. I thought the vermicelli came out excellent, while my wife preferred the peppers. The peppers were really nothing more than a meatloaf crammed into a pepper – natures handy container. They could have been a lot better with some more salt and maybe not such a lean meat. The first ones turned out kind of blah -- mainly because the heat was way to0 high on the pan, and I burnt the things into little bits. But once my friend the chef arrived and lowered the heat (duh) things went off rather well.
